Short answer: traditional salami is usually gluten free, because it’s made from meat, fat, salt, spices and time. But not every salami is. Some commercial salami includes ingredients that contain gluten, so it’s always worth checking. At The Salami Man, every salami we make is gluten free.

Why Some Salami Contains Gluten

Gluten is a protein found in wheat, rye, barley and oats (Healthdirect). Salami itself doesn’t need any of them. When gluten turns up, it’s usually from something added to the mix:

Fillers & bindersRusk, breadcrumbs or wheat starch, used to bulk out or bind cheaper products.
Seasonings & flavouringsSome spice blends, stock powders and flavour enhancers contain wheat.
Malt ingredientsMalt extract or malt vinegar comes from barley, which contains gluten.
Shared productionProducts made alongside gluten-containing foods can pick up traces.

How Traditional Salami Is Made

Proper salami is simple. Meat and fat are minced, seasoned with salt and spices, packed into casings, then fermented and slowly air-dried until firm and full of flavour. Time does the work, so there’s no need for fillers.

That’s how we make ours: free-range meat, real spices and small batches. Our game salamis combine kangaroo, venison, duck or wild boar with free-range pork fat for texture, and they’re gluten free too.

What to Check When Buying Salami

If you’re buying salami somewhere else, read the ingredient list. In Australia, cereals containing gluten must be declared on the label. Look out for:

Is pepperoni gluten free?
Ours is. The Godfather Pepperoni is gluten free, like all our salami. Supermarket pepperoni varies, so check the label.

Is Danish salami gluten free?
Yes. Our Danish Salami is gluten free in both its mild and medium chilli versions.

Does salami contain dairy?
Most of ours doesn’t, but our Blue Vein Cheese Salami contains cheese, so it contains lactose.
